I had a dream about being trapped in darkness and that song was playing the background. Scared the crap outta me.

Anyway, I love most of the Brawl music, especially Bramble blast, Ocarina of Time Medley, Unfounded Revenge/Smashing Song of Praise and Marx's Theme.
The MOTHER music is amazing, I especially love Bein' Friends, Eight Melodies, Pollyanna, Strong One, Snowman, Piggy Guys and the DCMC theme :D
The Sonic series has really good music, I love the main themes of each game (Open Your Heart, live and Learn, Seven Rings in Hand, What I'm Made Of, etc.), His World and dreams of An Absolution.

Just about every song from Mega Man 2 belongs here, but I'll give special props to Bubble Man and Flash Man's themes.

(SHAMELESS PLUG TIME because I don't know where else to put this but I have to share them because I've been listening to them nonstop for like three days. If anyone else can think of a better place, let me know...) Hyadain has done remixes for five of the MM2 Robot Master stage themes (They'll get around to the other 3 eventually) and they're all freaking amazing. Be warned, they're a bit...shounen-ai-ish, especially Crash Man's.

Crash Man (Gay, gay, gay, and hilarious, especially if you've heard of Kuso Miso Technique. And gay)
Flash Man (I can picture this one as an anime theme, really)
Quick Man (Distilled epic. That is all.)
Metal Man (No, he is not a dentist. Contains rap that is actually awesome.)
Bubble Man (Woobie-riffic. Likely not what you were expecting.)

From a series, definitely has to be Esaka, from The King of Fighters, the theme of what was Kyo's Hero Team in KOF '94-98, and his now currently the Japan Team theme. It's probably the KOF series' most iconic track. If we're talking SNK's most iconic period, that's up to debate. It could be any of Terry's themes, or any Geese's...

As for theme song/representing...? I'd have to say Like a Dream/Yume De Aru Youni, by DEEN, which was used as the opening theme for Tales of Destiny: http://www.youtube.com/watch?v=D3tCPUjpAbE (PS2 remake opening. I used this cause it has a bit more framework to it, and it looks prettier than the PSX original)

EDIT: Protoman's Whistle from Mega Man classic, and Zero's theme from Mega Man X, and its Mega Man Zero remix also deserve props. And, for some reason, I really, really liked Bubble Crab/Tidal Makoeen theme used in X2 and X5, and Slash Beast's stage theme in X4 was also good. Rainy Turtloid's in X6 though... Plain awesome.
 
If we're talking a whole soundtrack, I think right now Goldeneye 007 is dominating. I like it a lot. They have so many variations (done well) for the same jingle.

My favorite bike music is the one from Ruby, Sapphire, and Emerald. The bike music is also the Pokéblock making music.
 
Found a new awesome boss theme. This one's from Mario and Luigi RPG 3, which is only in Japan at the moment. It's the theme of the final battle. Took me a bit to find one without spoilers, but it's also pretty short.

In fact, most of the RPG Mario game boss themes are pretty epic.
