Mix Attackers are very useful in-game.
 
For Pikachu, you may want to get a Lightningrod Pikachu, and give it Substitute. Switch into an electric attack, sub, then destroy. Sounds situational but I've seen it happen more than once.

Blastoise is best used as a tank - rapid spin, toxic, scald, what have you. You could also go the gimmicky route and give it Choice Specs, but that robs it of its unique niche - a bulky water that can spin. Additionally, if you want to run rain, give it Rain Dish.

Charizard is amazing in sun teams with Solar Power. Fire Blast, Solarbeam (be careful of other weather Pokemon switching in), Focus Blast, Air Slash. Something like that. Outside of a sun team, it pretty much performs the same role, albeit much worse. Also be careful of Stealth Rock; if you use Blastoise on the same team, I'd suggest it as a spinner.

Venusaur is also amazing on a sun team with its DW ability, Chlorophyll. Sleep Powder, Growth (+2 in both offensive stats in the sun), Synthesis, Sludge Bomb, HP Fire, Energy Ball... You have quite a bit to choose from. You can even go mixed with Earthquake and Seed Bomb.

Espeon is amazing in Baton Pass teams due to its DW ability, Magic Bounce. It can be the end of a passing chain and abuse the boosts with Assist Power. Otherwise, you can use it as a Calm Minder, a specially offensive Pokemon with Psyshock, HP Fighting, etc., maybe even a Wish passer, but Umbreon does that better.

Umbreon... well, it's outclassed in almost every way. You can use it as a Curser - Curse, Payback, Baton Pass, Heal Bell, another coverage move, not really sure here. It can also Wish. And I think that's about it.
