I've been training my Elekid since I got it. But I have a problem. It's stats are god awful at level 61.

Well....not awful..but it's defenses are (Def. 81 and Sp. Def 78). It's other stats are very high but I cannot increase my defenses beyond these points fast enough to even battle anymore. It takes two hits and it's dead. I have tried vitamins but they take no effect and his stats are locked, and the difficulty in training him is pretty high. Exp. Share does not give any good stat increases to these categories (1 point is not good...at all). Are there any tips or hints at what I can do to remedy this?

PS: Do poffins F up your stats? If so, im screwed with my Noctowl as well...
 
Elekid isn't meant to be defensive. If you can't change its stats now, you won't be able to do ANYTHING about it ever. Either you don't have a good nature, or didn't put EVs into its Defense.
 
It might just be that it's an Elekid and its base stats in defenses are 37 and 55. :P Why do you not evolve it?

No, I don't think Poffins do anything to your stats. They raise contest stats and that's it.

Most of the berry ingredients stated that they lower defenses, so I figured it factored into poffins as well, cause I fed some to my Noctowl for a contest, and it stopped kicking arse afterwards.
 
The berries you're thinking of... I believe they lower EV's in a specific stat when eaten as is like if you used a Chesto Berry to remove a sleep status, as opposed to making a Poffin out of them which only increases the Contest stats like Spaekle said before.
 
Qualot and Grepa berries reduce Defense and Special Defense EVs, not Cheri or any of the other ones.

Pomeg, Kelpsy and Tamato reduce the other ones IIRC.
