Castlevania is a bit harder I'd say because of the infamous knockback and lots of bottomless holes. It's difficult to dodge enemies and their attacks, so you need to time your jumps well.
Castlevania 1 is fairly challenging thanks to the level design and stiff controls, but has some pretty sweet power ups.
Castlevania 2 is bad. Skip it.
Castlevania 3 is much harder than the first game, so save this one for last. It has a multiple partner system which can alleviate some pain, but god damn you will hate stairs
Castlevania 4 has the omni-directional whip and is my favourite of the old-school castlevania games. It's a hell of alot easier than 1 and 3, but later stages rack up the difficulty, so don't let your guard down lol
Rondo of Blood is a bit easier than 3 and 1, but is still fairly challenging.
