The living plants could still have different enough biology that electricity affects them differently, or they could just be another example of the oversimplification. As to fighting, it's super-effective on rock because of the "punching a solid stone in two" thing martial artists do, on ice because ice is really quite brittle, and on dark because it's ignoring all the sneaky tricks in favor of punching them in the face; I don't have an easy explanation for normal or steel, but like I say, there are still types whose logic is obscured to me.

Also electric and steel. Steel is a good conductor, so I would think it would maybe be not effective since it can't have a lightning rod type effect

Well, that depends. In the case of Pokémon encased in metal but not made of it, like Scizor, I'd imagine electric attacks to be reduced effectiveness or outright ineffective because of faraday cages. But for those made entirely of it, if anything their conductiveness ought to make them more vulnerable. Unless whatever their biological structure it doesn't use electrical impulses for movement...
